Get your boost with these Banana Bread Energy Balls 🍌
Makes 20 balls
Ingredients:
2 cups oats
1 banana
½ cup almonds
½ cup pecans
⅓ cup maple syrup or honey
1 tsp cinnamon
½ tsp vanilla
¼ tsp salt
Optional: 4 tbsp unsweetened shredded coconut, 2 tbsp mini chocolate chips
Directions:
Add all ingredients (except optional shredded coconut and chocolate chips) into a food processor and blend until the mixture is smooth (can have some texture, but small so you can roll into balls). You may find you need to cut the banana before hand.
Transfer mixture into a mixing bowl. Option to add in shredded coconut and mini chocolate chips, stir to combine.
Tip: to make rolling into balls easier, refrigerate for 1 hour. Use a scoop or a spoon and roll 1’ balls with your hands. Batter should make 20 balls.
Store in the fridge for a week or in the freezer for up to 3 months 😊
