I really enjoyed the last batch of granola bars I made - so it was time to take another stab at it, this time with some carrots in the mix!
I love morning glory muffins and carrot cake. The mix of carrot, coconut, and raisins is a great combo - so unshockingly these bars turned out great!
Ingredients
3/4 cup oats
1/2 cup oat flour (option to make your own with a food processor)
1/2 cup walnuts, chopped
2 tbsp flax seed, ground
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/4 cup coconut oil, melted
1/4 cup honey
1/4 cup applesauce
1 tsp vanilla
1 egg
1 cup shredded carrot (about 1 large carrots)
¼ cup raisins
1/2 cup unsweetened shredded coconut
Directions:
Preheat oven to 350 degrees
Combine dry ingredients in a mixing bowl (oats, oat flour, walnuts, flax seed, cinnamon, nutmeg, and salt)
In a separate bowl, whisk together wet ingredients (coconut oil, honey, applesauce, vanilla, and egg)
Pour wet ingredients into the dry ingredients bowl and stir well.
Add in shredder carrot, raisins, and coconut and mix until fully combined.
Line a 9x9 pan with parchment paper and pour the mixture into the pan. Spread evenly
Bake at 350 for 25-30 minutes
Let cool and cut into 12 bars. Tip: Use a pizza cutter for easy slicing!
