These energy balls are a decadent healthy snack for your pre-workout carb hit! Cacao powder and peppermint extract make these energy balls taste like a peppermint patties and the walnuts bring a nice crunch!
Ingredients:
1 cup pitted Medjool dates (about 12)
1 cup walnuts
3 tbsp cacao powder
2 tbsp nut butter
1 tbsp honey
½ tsp peppermint extract
2 tbsp mini chocolate chips
½ cup oats
1 tbsp chia seeds
Directions:
Soak dates in 1 cup of hot water for 10 minutes
Combine dates, walnuts, cacao powder, honey, nut butter, and peppermint extract in a food processor. Blend to your desired consistency - I like to leave the walnuts a bit chunky for a nice crunch
Transfer mixture to a mixing bowl and add in oats, chocolate chips, and chia seeds. Mix well
Form 1" balls with your hands and place on a parchment-lined plate.
Store in a covered container in the fridge or freezer
