This recipe is brought to you by a freezer full of over ripe bananas 🍌
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 (𝐌𝐚𝐤𝐞𝐬 𝟏𝟐)
1 ½ Cups All Purpose Flour
1 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
1 tsp Cinnamon
1 tsp Vanilla
3 Large Bananas, Mashed
¾ Cup White Sugar
1 Egg
⅓ Cup Butter, Melted
¼ Cup Mini Semi-Sweet Chocolate Chips
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬
Preheat oven to 350 degrees F and prepare muffin pan (grease or use muffin liners) Tip: a borrowed tip from bread baking, I poured ½ cup of water onto a baking sheet and placed on the bottom rack of the oven to make the oven moist for baking.
Combine dry ingredients (flour, baking powder, baking soda, salt, and cinnamon) in a mixing bowl and set aside
Combine wet ingredients (bananas, sugar, egg, butter, and vanilla) in a separate mixing bowl. Fold in dry ingredients and mini chocolate chips. Mix until smooth. Tip: Don’t over mix! The key is to barely mix to ensure a moist muffin
Scoop into muffin pans and bake at 350 for 25-30 minutes
Optional: Decorate with thin slices of banana before baking
