Coconut Chocolate Protein Balls šŸ„„šŸŒ“ā£

Get a quick hit with these coconut chocolate protein balls. As fun to make as they are to eat! I find this recipe especially yummy and I'm always happy to get some extra protein into my homemade pre-workout and recovery snacks.

Ingredients

  • 1 Ā½ Cup Oats (Ā¾ cup oat flour)

  • 1 Cup Natural Peanut Butter

  • Ā¼ Cup Honey

  • 1 Scoop Chocolate Protein (approx 30g)

  • 1 tbsp Cocoa Powder (if not Chocolate Protein)

  • Ā½ tsp Coconut Extract

  • 2 tbsp Mini Chocolate Chips

  • Ā¼ Cup Unsweetened Shredded Coconut


Directions

  1. In a food processor, blend Ā¾ cups of oats until it is fine in texture. Alternatively, you can use Oat Flour.

  2. Transfer Oat flour and remaining Ā¾ cup of (whole) oats to a large mixing bowl.

  3. Add peanut butter, honey, and protein powder. *Chocolate protein powder is best, but if you have vanilla or plain just add 1 tbsp of Cocoa Powder. Mix well

  4. Stir in Ā½ tsp of Coconut Extract and 2 tbsp of mini chocolate chips.

  5. Add in Ā¼ cup of water if the batter is too dry to form into balls.

  6. For easy rolling, let batter cool in the fridge for a couple of hours before forming into balls.

  7. Using a spoon or scoop, roll batter into 1ā€™ balls. Pour shredded coconut on to a place or baking sheet and roll balls in shredded coconut.

  8. Store in an air tight container in the fridge for 2 weeks or in the freezer for 3 months
