Espresso Cocoa Energy Ball Recipe ☕️

I have been making energy balls every weekend and having them as my pre-practice snack. They serve as an easy, yummy pop of energy for on your way out the door and better than a sugary granola bar in my opinion. Get a pop of caffeine ☕️& protein in ball form ⁣

⁣Ingredients:

  • 12 medjool dates, pitted⁣

  • 1/2 cup cooled brewed espresso⁣

  • 1 cup almonds⁣

  • 1/4 cup unsweetened cocoa powder⁣

  • 1 tbsp chia seeds⁣

  • Pinch of sea salt⁣

  • ¼ cup dried cranberries⁣

  • 1 tbsp honey⁣

  • ½ cup quick oats⁣

Instructions:

  1. Soak dates in a bowl with espresso for 15 minutes. After soaking transfer dates to a food processor and blend until caramel like in texture. Save espresso for later. ⁣

  2. Slowly add in almonds, cocoa powder, chia seeds, sea salt, and 4 tbsp of the espresso into the food processor to combine. Blend until mixed well (blend less if you want it to be more crunchy)⁣

  3. Transfer mixture to a mixing bowl and add oats, honey, and chopped dried cranberries. Mix until combined well ⁣ *mixture should be sticky enough to form into balls. If too wet add more oats, if too dry add more honey⁣

  4. Roll into 1 inch balls, should make approx. 16 balls⁣

Store in fridge for 1 week or freezer for 3 months!⁣
