I have been making energy balls every weekend and having them as my pre-practice snack. They serve as an easy, yummy pop of energy for on your way out the door and better than a sugary granola bar in my opinion. Get a pop of caffeine ☕️& protein in ball form
Ingredients:
12 medjool dates, pitted
1/2 cup cooled brewed espresso
1 cup almonds
1/4 cup unsweetened cocoa powder
1 tbsp chia seeds
Pinch of sea salt
¼ cup dried cranberries
1 tbsp honey
½ cup quick oats
Instructions:
Soak dates in a bowl with espresso for 15 minutes. After soaking transfer dates to a food processor and blend until caramel like in texture. Save espresso for later.
Slowly add in almonds, cocoa powder, chia seeds, sea salt, and 4 tbsp of the espresso into the food processor to combine. Blend until mixed well (blend less if you want it to be more crunchy)
Transfer mixture to a mixing bowl and add oats, honey, and chopped dried cranberries. Mix until combined well *mixture should be sticky enough to form into balls. If too wet add more oats, if too dry add more honey
Roll into 1 inch balls, should make approx. 16 balls
Store in fridge for 1 week or freezer for 3 months!
