Another quick meal with minimal ingredients - great for Airbnb kitchens! Fresh and fulfilling :)
Ingredients
4 cups Orzo Pasta
2 tbsp Olive Oil
4 boneless skinless Chicken Breasts
3 tbsp Italian Seasoning or Herb mix (Oregano and Basil)
2 tbsp Lemon Juice
1 tbsp Minced Garlic
½ Cucumber
1 pint Cherry Tomatoes
1 Avocado
Pre-made Tzatziki
½ cup Feta Cheese
1 Lemon
Pita Bread
Directions
Cut chicken breasts into thin slices. In a large bowl, mix together chicken, olive oil, lemon, juice, garlic, spices, and salt and pepper. Heat a large pan over medium heat. Once hot, oil pan and cook chicken (in batches if needed) until golden brown and cooked fully.
Bring a large pot of water to a boil and add orzo pasta. Cook for 8-10 minutes and strain using a colander. Return orzo to pot and stir in a splash of olive oil to avoid sticking.
While chicken and pasta are cooking, slice cucumber and tomatoes into quarters, crumble feta into a serving bowl, slice avocado, slice lemon into wedges, and cut pita into triangles (quarters). (Toasting the pita in the oven or in a pan is a nice touch!)
Assemble bowls by adding orzo on the bottom and topping with chicken, tomatoes, cucumber, dollop of tzatziki, sprinkle of feta, a lemon wedge, and a couple pieces of pita. Enjoy!
