We stopped buying premade bars a long time ago in our house but lately I’ve been missing them for a quick post workout snack. Our sessions are a lot longer in the fall and I’m not always home right away to get a meal in. These bars are the perfect carb/protein hit for post workout or between double sessions.
Ingredients:
3 ripe bananas, mashed
1 cup natural peanut butter
¼ cup honey or maple syrup
1 tsp vanilla extract
1 tsp cinnamon
2 cups oats
1 cup sliced almonds
Optional: chocolate chips, cranberries, shredded coconut
Directions:
Preheat oven to 350 degrees
In a large mixing bowl, combine bananas, peanut butter, honey, vanilla, and cinnamon until mixed very well.
Slowly add in oats and almonds while stirring until fully combined.
Option to add in other toppings. I added in a sprinkle of mini chocolate chips, dried cranberries, and unsweetened coconut. I didn’t measure these but I would stick to no more than 2 tbsp of each to make sure the mixture still holds.
Transfer mixture into a 9’x9’ pan lined with parchment paper.
Bake at 350 for 30 minutes! Cool completely before cutting.
Cut into 12 bars and store in the fridge or freezer.
