A delightful summer dinner! It is always a treat when you can accompany your protein with a fruit like mango or pineapple salsa. Luckily mango salsa is THE BOMB with jerk chicken. So let's spice it up!
Mango Salsa
Ingredients
1 large mango, peeled and dicedā£
Ā¼ cup red onion, dicedā£
1 jalapeƱo pepper, seeded and dicedā£
2 tbsp lime juiceā£
2 tsp granulated sugarā£
1 tsp olive oilā£
Ā¼ tsp ground cuminā£
Ā¼ tsp saltā£

Directions
Combine all ingredients in a bowl. Mix well and refrigerate for at least 30 minsā£

Jerk Chicken Marinade
Ingredients
12 chicken thighs, boneless and skinless (~2.5 lbs)ā£
1/3 cup green onions, choppedā£
Ā¼ cup lime juiceā£
2 tbsp olive oilā£
2 tbsp low sodium soya sauceā£
2 tbsp honeyā£
1 tbsp ginger-root, gratedā£
2 tbsp garlic, mincedā£
2 jalapeƱo peppers, seeded and mincedā£
2 tsp all spiceā£
1 tsp thymeā£
1 tsp saltā£
1 tsp pepperā£
Ā½ tsp cinnamonā£
Ā½ tsp nutmegā£

Directions
In a medium bowl, whisk together all marinade ingredients. Combine marinade with chicken thighs in a freezer bag and leave in the fridge overnight. ā£
Preheat your grill to medium heat and light brush rack with oil. Grill for approx. 15 min or until the chicken is no longer pink in the center. ā£
Serve chicken with mango salsaā£
