Couscous is a great adaptable grain to spice up your dinner's side dish. Cook with a variety of spices, vegetables, fruits and nuts! This Moroccan style dish is full of warm flavours and lots of texture.
Makes 6 Servings
Ingredients:
2 tsp olive oil
¾ cup diced onions
1 tsp minced garlic
1 cup low sodium chicken broth (or water)
½ cup orange juice
1 cup couscous
1 cup chickpeas
¼ raisins (or dried cranberries or currants)
1/3 cup toasted sliced almonds
2 tbsp fresh mint
2 tbsp fresh parsley
½ tsp ground cinnamon
½ tsp Cumin
½ tsp Coriander
½ tsp Ginger
½ tsp Curry powder
½ tsp Sea salt
Instructions:
Heat olive oil in a medium pot over medium heat. Add onions and garlic. Cook and stir until onions begin to soften (~3 mins)
Add broth, orange juice, and spices. Mix well and bring mixture to a boil
Reduce heat to low and stir in couscous, chickpeas, and raisins.
Cook for 1 minute, then remove from heat. Let mixture stand for 5 minutes, keep covered.
Stir the couscous with a fork to fluff, then stir in almonds, mint, and parsley.
