Moroccan Couscous Side Dish Recipe

Couscous is a great adaptable grain to spice up your dinner's side dish. Cook with a variety of spices, vegetables, fruits and nuts! This Moroccan style dish is full of warm flavours and lots of texture.

Makes 6 Servings

Ingredients:

  • 2 tsp olive oil

  • ¾ cup diced onions

  • 1 tsp minced garlic

  • 1 cup low sodium chicken broth (or water)

  • ½ cup orange juice

  • 1 cup couscous

  • 1 cup chickpeas

  • ¼ raisins (or dried cranberries or currants)

  • 1/3 cup toasted sliced almonds

  • 2 tbsp fresh mint

  • 2 tbsp fresh parsley

  • ½ tsp ground cinnamon

  • ½ tsp Cumin

  • ½ tsp Coriander

  • ½ tsp Ginger

  • ½ tsp Curry powder

  • ½ tsp Sea salt

Instructions:

  1. Heat olive oil in a medium pot over medium heat. Add onions and garlic. Cook and stir until onions begin to soften (~3 mins)

  2. Add broth, orange juice, and spices. Mix well and bring mixture to a boil

  3. Reduce heat to low and stir in couscous, chickpeas, and raisins.

  4. Cook for 1 minute, then remove from heat. Let mixture stand for 5 minutes, keep covered.

  5. Stir the couscous with a fork to fluff, then stir in almonds, mint, and parsley.
