Pork Souvlaki with Greek Salad & Oven Roasted Potatoes

Greek Dinner 🥰 My favourite!⁣

If I had to eat one meal for dinner everyday I would definitely choose a traditional greek souvlaki dinner. Fresh ingredients and simple seasoning - so so flavourful and yummy! Oh.. and lots of garlic 😛⁣

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (𝗠𝗮𝗸𝗲𝘀 𝟰 𝗦𝗲𝗿𝘃𝗶𝗻𝗴𝘀)⁣

  • 2 6oz Boneless Pork Chops⁣

  • 1 Whole English Cucumber⁣

  • 2 Roma Tomatoes⁣

  • 2 White Potatoes⁣

  • ¼ Red Onion⁣

  • Kalamata Olives ⁣

  • ¼ Cup Feta, Crumbled⁣

  • 4 Pitas⁣

  • 2 tbsp Olive Oil⁣

  • ½ Tbsp Lemon Juice⁣

  • 3 tsp Minced Garlic⁣

  • 1 ⅓ tbsp All Purpose Greek Seasoning⁣

  • 3 tbsp Balsamic Vinigarette ⁣

  • Tzatziki⁣

  • Bamboo Skewers⁣

  • Salt to taste⁣

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀 ⁣

  1. Cut Pork Chops into 1” - 1.5” cubes. Mix pork with 1 tbsp olive oil, ½ tbsp lemon juice, 1 tbsp all purpose greek seasoning, 2 tsp minced garlic, and salt to taste in a large bowl. Leave to marinate for at least 2 hours. ⁣

  2. Preheat oven to 425 degrees (F)⁣

  3. Chop potatoes into 1” pieces and place in a medium bowl. Toss with 1 tbsp olive oil, 1 tsp all purpose greek seasoning, 1 tsp minced garlic, and salt to taste. Place on a baking sheet and bake for 30-35 minutes at 425 F until browned and tender.⁣

  4. Thread marinated pork through skewers (*I always forget to do this but if you soak your skewers in water they won’t burn!) and preheat your grill to medium high heat. Grill skewers for approx 5 minutes, turn skewers while grilling to ensure they are evenly cooked! ⁣

  5. Transfer pork to serving platter and let rest for 3 minutes. Meanwhile, briefly grill pitas and keep warm.⁣

  6. Chop cucumber and tomatoes to your liking (I like them chunky!), slice red onion, and combine in a large bowl with feta and olives. Option to drizzle with balsamic vinaigrette or just olive oil! ⁣

  7. Serve with Tzatziki and enjoy!! ⁣
