Greek Dinner 🥰 My favourite!
If I had to eat one meal for dinner everyday I would definitely choose a traditional greek souvlaki dinner. Fresh ingredients and simple seasoning - so so flavourful and yummy! Oh.. and lots of garlic 😛

Cut Pork Chops into 1” - 1.5” cubes. Mix pork with 1 tbsp olive oil, ½ tbsp lemon juice, 1 tbsp all purpose greek seasoning, 2 tsp minced garlic, and salt to taste in a large bowl. Leave to marinate for at least 2 hours.
Preheat oven to 425 degrees (F)
Chop potatoes into 1” pieces and place in a medium bowl. Toss with 1 tbsp olive oil, 1 tsp all purpose greek seasoning, 1 tsp minced garlic, and salt to taste. Place on a baking sheet and bake for 30-35 minutes at 425 F until browned and tender.
Thread marinated pork through skewers (*I always forget to do this but if you soak your skewers in water they won’t burn!) and preheat your grill to medium high heat. Grill skewers for approx 5 minutes, turn skewers while grilling to ensure they are evenly cooked!
Transfer pork to serving platter and let rest for 3 minutes. Meanwhile, briefly grill pitas and keep warm.
Chop cucumber and tomatoes to your liking (I like them chunky!), slice red onion, and combine in a large bowl with feta and olives. Option to drizzle with balsamic vinaigrette or just olive oil!
Serve with Tzatziki and enjoy!!
