I have been wanting to make some smaller meal options for the morning where I can still get a good hit of protein and carbs but it isn't a huge plate of eggs and toast. I also don't really use protein powder in the summer so I thought it would be fun to come up with a recipe to use some!
Presenting Protein Banana-Oat Pancakes with Blueberries 🥞
Ingredients
1 Banana, Mashed
2 Eggs
1 tsp Vanilla Extract
1 tbsp Honey (optional)
½ Cup Oats*
1 ½ Scoops Vanilla Protein
½ tsp Baking Powder
½ tsp Cinnamon
2 tsp Chia Seeds
Pinch of Salt
½ Cup Blueberries (frozen or fresh)
Topping Options:
Greek Yogurt
Fresh Fruit
Nut/Seed Butter
Maple Syrup
Jam
Directions:
Combine all dry ingredients in a large mixing bowl. *Note: I put my oats in a food processor first to make the mixture smoother. I pulsed my oats until they were about half way between oat flour and oat flakes.
In a separate bowl, mix together mashed banana, eggs, vanilla extract, and honey.
Fold wet mixture into the dry ingredients, stirring well.
Bring a large pan to medium heat and grease with coconut oil, butter, or cooking spray.
Using a large spoon or ladle, pour your mixture into small circles on your pan and place a few blueberries on top. Cook until golden brown and flip!
Top with yogurt or maple syrup and some fresh fruit, enjoy!
