Usually a fall favourite but I opened a can of pumpkin for another recipe and decided to whip these up. They are super yummy and a nice change from your standard nut butter & honey based energy ball.
Ingredients
2 Cups Pitted Dates (~20 Dates)
⅔ Cup Pumpkin Puree
2 tbsp Maple Syrup or Honey
2 Cups Rolled Oats
½ Cup Pumpkin Seeds
¼ tsp cinnamon
⅛ tsp nutmeg
⅛ tsp ground cloves
¼ cup mini chocolate chips
Directions
Soak dates in 2 cups of hot water for 15 mins
Transfer dates to food processor. Add 2 tbsp water, maple syrup or honey, pumpkin purée, ½ cup of oats, ¼ cup pumpkin seeds, and spices. Pulse until blended well
Transfer mixture to a large bowl and add remaining oats, pumpkin seeds, and chocolate chips. Mix until fully combined.
Refrigerate for 1 hour and then roll into 1 inch balls. Should make about 20 balls
Store in the fridge for 1 week or freezer for 3 months!
