Pumpkin Spice Energy Ball Recipe

Usually a fall favourite but I opened a can of pumpkin for another recipe and decided to whip these up. They are super yummy and a nice change from your standard nut butter & honey based energy ball.

Ingredients

  • 2 Cups Pitted Dates (~20 Dates)⁣

  • ⅔ Cup Pumpkin Puree⁣

  • 2 tbsp Maple Syrup or Honey⁣

  • 2 Cups Rolled Oats⁣

  • ½ Cup Pumpkin Seeds⁣

  • ¼ tsp cinnamon⁣

  • ⅛ tsp nutmeg⁣

  • ⅛ tsp ground cloves⁣

  • ¼ cup mini chocolate chips ⁣

⁣Directions

  1. Soak dates in 2 cups of hot water for 15 mins⁣

  2. Transfer dates to food processor. Add 2 tbsp water, maple syrup or honey, pumpkin purée, ½ cup of oats, ¼ cup pumpkin seeds, and spices. Pulse until blended well⁣

  3. Transfer mixture to a large bowl and add remaining oats, pumpkin seeds, and chocolate chips. Mix until fully combined. ⁣

  4. Refrigerate for 1 hour and then roll into 1 inch balls. Should make about 20 balls ⁣

Store in the fridge for 1 week or freezer for 3 months!⁣
