We whipped this up in 20' after settling into our apartment before race day! Use this as a go-to travel meal when you have minimal kitchenware and spices.
Ingredients
1 Rotisserie Chicken (3 Cups)
2 tbsp Olive Oil
1 cup Sweet Onion
2 Garlic Cloves, minced
Ā½ package Taco Seasoning
Ā¾ cup Canned Tomatoes
Salt and Pepper to taste
12 small Corn Tortillas
Pre-made Avocado (or make your own)
Pre-made Salsa
1 Lime
Directions
Heat a large pan over medium heat, add olive oil and diced onion. SautƩ until tender, then add minced garlic, taco seasoning, and tomatoes. Bring to a simmer and cook for 5 minutes
Place tomato mixture in a food processor or blender and blend until smooth.
Shred the rotisserie chicken into small pieces and add to the pan along with the blended sauce. Cook for 5 minutes and add salt and pepper to taste.
Place corn tortillas directly over the stove element to toast. Fold tortillas and assemble tacos! Add salsa, guac, and a squeeze of lime and enjoy!
