Speedy Chicken Tacos šŸŒ®

We whipped this up in 20' after settling into our apartment before race day! Use this as a go-to travel meal when you have minimal kitchenware and spices.


Ingredients

  • 1 Rotisserie Chicken (3 Cups)

  • 2 tbsp Olive Oil

  • 1 cup Sweet Onion

  • 2 Garlic Cloves, minced

  • Ā½ package Taco Seasoning

  • Ā¾ cup Canned Tomatoes

  • Salt and Pepper to taste

  • 12 small Corn Tortillas

  • Pre-made Avocado (or make your own)

  • Pre-made Salsa

  • 1 Lime

Directions

  1. Heat a large pan over medium heat, add olive oil and diced onion. SautƩ until tender, then add minced garlic, taco seasoning, and tomatoes. Bring to a simmer and cook for 5 minutes

  2. Place tomato mixture in a food processor or blender and blend until smooth.

  3. Shred the rotisserie chicken into small pieces and add to the pan along with the blended sauce. Cook for 5 minutes and add salt and pepper to taste.

  4. Place corn tortillas directly over the stove element to toast. Fold tortillas and assemble tacos! Add salsa, guac, and a squeeze of lime and enjoy!
