Um.. YUM! I was going to make a stir fry and decided to spice things up with some rice noodles :) Super easy to make - a bit of prep involved, but totally worth it! ā£
The star of this dish (and my new obsession) is CRUNCHY GARLIC with chilli oil. I donāt know how I havenāt come across this before but I looooove itā£

Ingredients (Makes 5 Servings)ā£
12oz Pork Chops (2 Costco Size Chops), 1ā Cubedā£
1 Package (14oz) Rice Noodlesā£
Ā¼ White Onion, Slicedā£
2 Green Bell Peppers, Slicedā£
ā Red Cabbage, Slicedā£
1 Cup Carrot, Shreddedā£
2 Cups Sugar Snap Peasā£
ā Cup Soya Sauce ā£
Ā¼ Cup Seasame Sauceā£
1 tbsp Olive Oilā£
2 tbsp Garlic, Mincedā£
Add ons:ā£
2 Sprouts Green Onion, Chopped ā£
1 can (135g) Water Chestnutsā£
1-2 Cups Bean Sproutsā£
ā Cup Peanuts, Choppedā£
Sweet Thai Chilli Sauceā£
Crunchy Garlic Toppingā£
Directionsā£
In a medium bowl, combine cubed pork chops with soya sauce, sesame sauce, and garlic. Set aside to marinate for at least an hour.ā£
Using a large wok (or 2 large fry pans) on medium heat, add in olive oil. Once oil is hot, start by adding in pork. As the pork is almost finished cooking (3-5 minutes), add in onion and bell pepper. ā£
If you are using 2 pans, use a separate pan on medium heat with olive oil to cook the red cabbage, carrot, and sugar snap peas together. If you are using a large wok, add this in after a couple minutes of cooking the pepper and onion with the pork. ā£
While youāre meat and vegetables are cooking, cook your rice noodles according to package instructions. (Usually 4-6 minutes and rinse with cold water)ā£
Add your noodles to the bottom of your bowl and serve meat and vegetables on top. Add your toppings: green onion, water chestnuts, bean sprouts, chopped peanuts, and crunchy garlic. You may want to add more soya/sesame sauce to your bowl. Sweet Chilli Sauce also accompanies this dish well.ā£
