Almonds and Cranberries are always my go-to when making Granola. The almond and vanilla extract bring this recipe to the next level! Enjoy a flavourful golden crunch with your yogurt :)
Ingredients:
4 cups oats
1 cup crispy rice cereal
½ cup whole almonds
½ cup shaved almonds
½ cup honey
½ cup nut butter
¼ cup coconut oil
1 ½ tsp vanilla extract
¼ tsp almond extract
1 tsp Cinnamon
⅓ cup dried cranberries
Directions:
Add the oats, cereal, cinnamon and almonds into a bowl. Stir together and set aside. *Do not add in cranberries
Melt together the honey, nut butter, coconut oil, and extracts either on the stove or in the microwave. Stir together until smooth.
Pour the liquid ingredients over the dry and stir to combine. You want the granola to be as fully coated as possible.
Transfer the granola onto a parchment-lined baking sheet. Bake 325ºF for 35-40 mins (or until golden brown), flipping every 15.
Sprinkle Dried Cranberries on top of granola and allow to cool completely before transferring into a sealed container.
