Vanilla Almond Cranberry Granola Recipe

Almonds and Cranberries are always my go-to when making Granola. The almond and vanilla extract bring this recipe to the next level! Enjoy a flavourful golden crunch with your yogurt :)

Ingredients:

  • 4 cups oats⁣

  • 1 cup crispy rice cereal⁣

  • ½ cup whole almonds⁣

  • ½ cup shaved almonds⁣

  • ½ cup honey⁣

  • ½ cup nut butter⁣

  • ¼ cup coconut oil ⁣

  • 1 ½ tsp vanilla extract⁣

  • ¼ tsp almond extract⁣

  • 1 tsp Cinnamon ⁣

  • ⅓ cup dried cranberries⁣

Directions:

  1. Add the oats, cereal, cinnamon and almonds into a bowl. Stir together and set aside.⁣ *Do not add in cranberries

  2. Melt together the honey, nut butter, coconut oil, and extracts either on the stove or in the microwave. Stir together until smooth.⁣

  3. Pour the liquid ingredients over the dry and stir to combine. You want the granola to be as fully coated as possible.⁣

  4. Transfer the granola onto a parchment-lined baking sheet. Bake 325ºF for 35-40 mins (or until golden brown), flipping every 15.⁣

  5. Sprinkle Dried Cranberries on top of granola and allow to cool completely before transferring into a sealed container.⁣
